- Chicken broth
- Swiss chard
- Oregano
- Crushed red pepper
- Smoked paprika

Preparation
Step 1
Coat tomatillos, chilies, onion and garlic in vegetable oil. Roast in oven until brown and blistering. Let cool, puree with cliantro to make a salsa.
For soup:
Dice onion and carrot. Saute until soft, add garlic and spices. Deglaze pan with beer. Add in tomatillo sauce, one can of drained white beans and broth. Puree another can of white beans, add to pot and let simmer. Meanwhile, brown sausage in another pan. Set aside. Let soup simmer to taste, adding salt, pepper and other spice as needed. Add sausage, swiss chard and dash of heavy cream. Serve with tortillas, cotija and cilantro.
