Ingredients
- 12 Manicotti Shells, cooked according to package directions
- 1 cup Cottage Cheese
- 1 cup Shredded Mozzarella Cheese
- 1/2 cup Parmesan Cheese, fresh, grated
- 3 cloves Garlic, minced
- 8 oz Spinach, chopped and well drained
- 1/4 cup Butter
- 3 cloves Garlic, thinly sliced
- 1 cup Whole Milk
- 1 cup Parmesan Cheese, fresh, grated
- Spinach Leaves & Dried Parsley Flakes, for garnish
Preparation
Step 1
Prepare manicotti as directed. Rinse in cool water. In medium mixing bowl, stir together cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, minced garlic, and spinach. Stuff manicotti shells, using approximately 1/4 cup filling in each shell. Place in large shallow baking dish. Set aside.
In 2 quart saucepan, melt 1 tablespoon butter. Add sliced garlic and sauté over medium heat just until the garlic begins to brown. Add remaining butter and melt. Whisk in milk and 1 cup Parmesan cheese. Cook over medium heat just until cheese melts. Pour sauce over manicotti. Bake in preheated 350 degree oven for 30 minutes, or until bubbly. Garnish with fresh spinach leaves and dried parsley flakes.
Helpful Tips:
I make my own manicotti shells by whisking 2 cups water, 2 cups flour, and 1 teaspoon salt together. Fry in oiled pan as you would crepe. Add filling, roll up, and place seam side down in your baking pan.
