Spanish Rice, Spicy

Ingredients

  • 2 TBL canola oil
  • 1/2 C chopped onion
  • 2 minced garlic cloves
  • 2 C uncooked long-grain rice
  • 1 3/4 C chicken broth
  • 10oz can diced tomatoes &
  • green chilies, undrained
  • 1 C frozen whole-kernel corn,
  • thawed

Preparation

Step 1


Heat canola oil in lg. saucepan over med-high heat.
Add onion & garlic.
Saute 3 min.
Add uncooked rice - cook 2 min - stirring constantly.
Add chicken broth & canned tomatoes/green chilies
Bring to a boil.
Cover, reduce heat & simmer 20 min or until liquid is absorbed.
Stir in whole-kernel corn.
