Ingredients

  • TOPPING:
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp maple extract
  • 1/2 cup margarine
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 cup milk
  • 2 1/2 cups chopped rhubarb
  • 1/2 cup white sugar (scant) mixed with 1 1/2 tsp cinnamon

Step 1

Mix flour, baking soda and salt. In a large bowl, cream the margarine, sugar and beat in the egg. At low speed , beat in flour mixture alternately with the milk. Stir in maple flavouring and the rhubarb. Turn into a greased 9x13x2 pan and evenly spread. Sprinkle topping all over, then swirl lightly into the cake batter with a knife. Bake @ 350 for 40 minutes.
