Pumpkin Chocolate Chip Muffins

Ingredients
- 2 eggs
- 1/2 cup butter, melted
- 1 cup cooked pumpkin
- 1 cup brown sugar, packed
- 1 2/3 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ginger
- 1/2 tsp. freshly grated nutmeg
- 1/4 tsp. allspice
- 1 tsp. cinnamon
- 1 cup chocolate chips
- TOPPING
- 3 tbsp. sugar
- 1 tbsp. unsweetened cocoa powder

Step 1
Preheat oven to 375 Grease muffin tins or line with paper.
In mixing bowl, whisk together melted butter, eggs, pumpkin and brown sugar.
In a separate bowl stir together the flour, baking powder, salt and spices.
Add the dry ingredients to the pumpkin mixture; stir until evenly moistened.
Stir in the chips.
Spoon the batter into muffin cups, filling them about half full.
TOPPING Mix together the cocoa and sugar and sprinkle some over each muffin.
Bake 20-25 minutes for regular sized muffins, about 15 minutes for mini’s.
Yield about 1 dozen reg. size muffins; 2 doz. mini
