Corn Salad

Ingredients

  • 8 ears fresh corn, preferably cut off just-picked cobs
  • 3 Tablespoons chopped fresh dill
  • 3 Tablespoons snipped fresh chives
  • 1/4 cup toasted pine nuts
  • 1/2 cup freshly grated Parmesan cheese
  • 2 Tablespoons white wine vinegar
  • 2 Tablespoons olive oil
  • Salt and freshly ground pepper to tast

Preparation

Step 1

Mix ingredients in a large bowl and allow flavors to meld at room temperature for 2-3 hours. Serve.
