Ingredients
- 1/2 bowl light soya sauce
- 1 1/2 tbsp sugar
- 600 g medium sized prawns
- 6 tbsp Chinese wine
- Oil
- 5-7 sprigs spring onion chopped
Preparation
Step 1
1) Prepare and trim the head of the prawns
2) Heat the oil on high fire, and toss the prawns for a while then lower the fire
3) Sprinkle 2 tbsp of Chinese wine around the rim of the pan
4) Raise the fire again, add the soya and sugar mixture
5) Toss the prawns, and add another 2 tbsp of Chinese wine
6) Make sure all the prawns are cooked, then add the final round of Chinese wine
7) Turn off the fire and add in generous amount of spring onion
