Ingredients
- 1 store bought graham cracker crust
- 2 large eggs, cold
- 2 large egg yolks, cold
- 3/4 cup sugar
- 1/2 cup fresh lemon juice
- 6 tbsp. cold unsalted butter, cut into 6 pieces

Step 1
1. In a pot, bring about 1 1/2 inches of water to a boil. Meanwhile, in a metal bowl, whisk the eggs, yolks and sugar for about 1 minute. Set the bowl over the pot and whisk for 2 minutes. Whisk in lemon juice in 3 parts.
2. Continue whisking vigorously, until mixture is thickened and light in color. Total cooking time is 8 to 10 minutes. Turn off heat and whisk in butter 1 piece at a time. Pour warm mixture into crust; place the pan on a baking sheet.
3. Place tart under the broiler for a few seconds to brown. Serve at room temperature or cold.
