Mexican Cornbread Casserole

Ingredients
- 1 lb ground beef
- 1 chopped onion
- 1 can Rotel (drained)
- 2 eggs beaten
- 1 cup grated sharp cheese
- 2 cups cream style corn (16 oz)
- 2/3 cup milk
- 1 box Jeffy cornbread mix
- Preheat oven to 425.

Step 1
Brown ground beef, drain. Add onions, Rotel with meat, set aside. Mix eggs, 1 cup creamed corn, milk and cornbread mix. Pour 1/2 cornbread mix into 9" square pan.Put meat on top of that, sprinkle cheese on top and put remaining corn on top of cheese. Bake 30 to 40 mins. until slightly browned.
