Ingredients

  • 1 envelope (four 1/2 cup servings) sugar free strawberry jello
  • 2 cups canned, sliced peaches in natural juice
  • 1 envelop knox
  • 1/4 cup water
  • 1 cup evaporated skimmed milk, chilled
  • Sugar substitute equal to 4 tsp of sugar
  • 1 tsp vanilla extract

Step 1

Chill medium mixing bowl and beaters of electric mixer

Prepare strawberry jello according to directions, let cool

Spoon peach slices evenly into 4 dessert dishes; pour 1/4 of the cooled jello over each. Cover each dish securely with plastic wrap; refrigerate at a tilt so that the gelatin sets at an angle.

In a small saucepan, sprinkle knox over water; let stand a few minutes to soften. Set over low heat; ;cook stirring constantly, until dissolved. Remove from heat.

Using chilled bowl and beaters, whip evaporated milk until stiff; beat in dissolved knox, sugar sub and vanilla.

Spoon milk mixture evenly over each dessert; cover and refrigerate until set.
