Seafood Salad topped with Avocado

Enjoy this salad topped on a bed of lettuce or alone. Served with sliced avocado (optional) adds an amazing tasty twist to this already flavorful salad.

Ingredients

  • 2 lbs of Imitation Crab Meat (chilled)
  • 1 lb Medium Shrimp (steamed or boiled)
  • 1 Small Onion (diced)
  • 1 Medium Green Pepper (diced)
  • 1/2 Cucumber (diced)
  • 1 Large Tomato (diced) OR 4 oz Cherry Tomatoes (halved)
  • 1 cup Mayonaise
  • 1/2 cup Ranch Dressing
  • 8 oz Feta Cheese (crumbled Tomato Basil or Garlic Herb)
  • 1 Large Ripe Avocado (pitted and sliced)
  • Garlic Powder
  • Black Pepper
  • Old Bay Season
  • Paprika

Preparation

Step 1

Steam or boil shrimp, set aside to cool. Dice all vegetables. In a large bowl combine the imitation crab, shrimp and vegetables. Season with garlic powder, black pepper & Old Bay to taste. Mix well. Fold in the Mayonaise, Ranch Dressing and Cheese. Sprinkle Paprika on top. Chill & Serve over a bed of lettuce.

Sliced Avocado placed on top of the salad is optional but can be a wonderful addition to those who love this nutritional fruit.


*May substitue the Feta Cheese with fresh Shredded Parmesan Cheese.
