Ingredients

  • 1 whole well-trimmed beef brisket (about 5 pounds)
  • 4 cloves garlic,minced
  • 1/2 teaspoon black pepper
  • 2 large onions, cut into 1/4-inch slices and separated into rings
  • 1 (12-ounce) bottle chili sauce
  • 3/4 cup beef broth, beer or water
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon firmly packed brown sugar

Step 1

1Preheat oven to 350°F.
.2Place brisket, fat side up, in shallow roasting pan. Spread garlic evenly over brisket; sprinkle with pepper. Arrange onion rings over brisket.
.3Combine chili sauce, beef broth, Worcestershire sauce and brown sugar in small bowl; pour over brisket and onions. Cover with heavy-duty foil or roasting pan lid.
.4Roast brisket 2 hours. Turn over brisket; stir onion rings into sauce and spoon over brisket. Cover; roast 1 to 2 hours longer or until fork-tender. Transfer brisket to cutting board. Tent with foil; let stand 10 minutes.
.5Stir juices in roasting pan. Spoon off and discard fat from juices. (Juices may be thinned to desired consistency with water or thickened by simmering, uncovered, in saucepan.)
.6Slice brisket diagonally across grain into thin slices. Spoon pan juices over beef brisket.
