Marinated Mushrooms III

  • 2 1/2 pounds fresh white mushrooms
  • 6 garlic cloves
  • 2 cups distilled vinegar
  • 1/2 teaspoon salt
  • Olive oil as needed
  • Red wine vinegar as needed
  • Salt to taste
  • Freshly-ground black pepper to taste
  • Dried oregano to taste

Step 1

Blanch mushrooms and garlic in distilled vinegar and salt, bringing to hard boil. Take off and let cool in the liquid (about 10 minutes). Drain, marinate in olive oil and vinegar (one part olive oil to two parts vinegar). Add salt, pepper and oregano to taste. Marinated mushrooms will store well in the refrigerator
