Spicy Sweet Potato Fries

Ingredients

  • 2 Tsp ground coriander
  • 1 Tsp ground fennel
  • 1 Tsp dried oregano
  • 1 Tsp cayenne pepper
  • 2 Tsp kosher salt
  • 1 sweet potato per person

Preparation

Step 1

1. Preheat oven to 425F. Peel sweet potatoes and cut into strips about 3 inches long and 3/4 inches thick.

2. In a mortar and pestle, grind together coriander, fennel, oregano, and cayenne. Mix in salt. (this makes enough for several batches of sweet potato, store in a small jar.)

3. In a bowl, toss together cut sweet potatoes, olive oil, and spice mixture. You'll need 1 Tbls olive oil and 2 Tsp. ofe the spice mixture for every two sweet potatoes, depending on how spicy you like it.

4. Spray flat roasting pan with non-stick spray. Spread out sweet potatoes in a single layer. Roast 30-40 minutes, turning about every 10 minutes. Sweet potatoes should be softened through and lightly brown when they are done. (they will only be slightly crisp. If you want them crisper I might increase the temperature to 450 F or use convection if you have it, but sweet potatoes never get as crisp as fried potatoes.) Serve hot.
