Parmesan Mashed Potatoes
serves 4, 3/4 cups each

- 1 1/4 pounds Yukon Gold potatoes (about 4 medium), left unpeeled and cut into 1-inch pieces
- 1/4 cup low fat buttermilk
- 1/4 cup nonfat milk
- 2 tbsp Parmesan cheese
- Salt to taste
- 2 tsp unsalted butter, cut into 4 pieces
Place potatoes in a steamer basket. Steam until tender 12-15 minutes.
While potatoes are cooking, combine buttermilk, milk in a small saucepan and cook over lowest heat until just warm. Do not boil. Drain potatoes, return to pot, add warmed milk and mash togther. Stir in the Parmesan cheese, season with salt, serve with a dab of butter if desired.
