  • 1 lb yellowtail
  • 1/4 cup sugar
  • 1/8 cup salt
  • 2 tbsp chili powder
  • CORN MOLE
  • 3 oz evoo
  • 3 oz white onion-thinly sliced
  • 10 oz corn kernels
  • 4 oz corn stock (from boiling corn Cobb with basil for 15 minutes)

Preparation

Step 1

cut fish into 1" strip
coat with dry ingredients and wrap in plastic overnight
remove and rinse, pat dry and store uncovered for 1 hour
slice in 1/4" strips for taco
CORN MOLE
sweat onions- do not brown
sauteed corn until soft
puree corn and broth and strain
serve with cabbage or pea tendrils
