Ingredients
- 1 lb yellowtail
- 1/4 cup sugar
- 1/8 cup salt
- 2 tbsp chili powder
- CORN MOLE
- 3 oz evoo
- 3 oz white onion-thinly sliced
- 10 oz corn kernels
- 4 oz corn stock (from boiling corn Cobb with basil for 15 minutes)

Preparation
Step 1
cut fish into 1" strip
coat with dry ingredients and wrap in plastic overnight
remove and rinse, pat dry and store uncovered for 1 hour
slice in 1/4" strips for taco
CORN MOLE
sweat onions- do not brown
sauteed corn until soft
puree corn and broth and strain
serve with cabbage or pea tendrils
