Summer Salad Pasta


When your garden is overrun with tomatoes this is the perfect dinner to make.

  • Tomato Salad:
  • 6 – 8 tomatoes, different varieties is nice
  • 3 tablespoons oil
  • 1 teaspoon garlic powder (to taste)
  • 2 teaspoons garlic in oil
  • salt and pepper to taste
  • 1 pound pasta – linguini or fettucine
  • Balsamic Reduction

Step 1

Thinly slice tomatoes. Add oil, salt, pepper, garlic powder and garlic. Mix well. Refrigerate salad until needed.

Make the pasta, drain and top with tomato salad. "Decorate" with reduction.
