Summer Salad Pasta
When your garden is overrun with tomatoes this is the perfect dinner to make.
- Tomato Salad:
- 6 – 8 tomatoes, different varieties is nice
- 3 tablespoons oil
- 1 teaspoon garlic powder (to taste)
- 2 teaspoons garlic in oil
- salt and pepper to taste
- 1 pound pasta – linguini or fettucine
- Balsamic Reduction
Thinly slice tomatoes. Add oil, salt, pepper, garlic powder and garlic. Mix well. Refrigerate salad until needed.
Make the pasta, drain and top with tomato salad. "Decorate" with reduction.
