Hamburger Cupcakes

Ingredients

  • 1 Chocolate Cake Box Mix
  • 1 Vanilla or Yellow Cake Box Mix
  • 3/4 Cup of Shredded Coconut (for "Lettuce")
  • Green Food Coloring (gel colors recommended)
  • Yellow Fondant (for cheese if you want to add cheese to your hamburgers)
  • Red & Yellow Frosting (for the ketchup & mustard)
  • Sesame Seeds (for the top of the cupcake "bun").
  • Frilled out toothpicks (for the final touch on the cupcake)
  • Pure Almond Extract
  • (follow remaining ingredients and measurements exactly as listed on box).

Preparation

Step 1

Spray cupcake tins very well with non-stick spray. Bake one batch of vanilla cupcakes and one batch of chocolate cupcakes. After baking, let your cupcakes cool completely.

Slice your vanilla cupcakes in half, horizontally.

Slice your chocolate cupcakes in half, horizontally (keep in mind the chocolate is going to resemble the "meat" in your hamburger so you can slice this as thick as you want your "patty" to look like inside of the cupcake "bun"). Set these aside until after you have all your hamburger pieces prepared.

The decorating:

The lettuce:
Dye your coconut shreds by mixing 3/4 Cup of Coconut shreds with 2-3 drops of light green food coloring inside of a ziploc baggie and shaking it all together. It magically looks like lettuce when you are done.

The ketchup and mustard:
Color half of your buttercream red and half of your buttercream yellow.

The cheese:
Make this out of fondant if you'd like to turn your hamburgers into cheeseburgers.
Roll fondant to a 1/8" thickness and use a square cookie or fondant cutter to cut out your cheese squares.

Assembling your burgers:

Begin with the bottom half of a vanilla cupcake. Pipe your yellow frosting around the edges of the vanilla cupcake to resemble mustard. Add chocolate cupcake "meat" to the top of the vanilla cupcake.

Pipe red frosting around the edges of the chocolate cupcake to resemble ketchup. Sprinkle coconut shreds on top of the red frosting. If you want to make this a cheeseburger, you can add the square slice of fondant cheese here. Sandwich all this together with the top half of your vanilla cupcake.

Brush the top of your cupcake with almond extract. While the extract is still wet, sprinkle sesame seeds on top. For a final touch, you can insert a frilled out toothpick.
