Colorful Coleslaw

Ingredients

  • 1/3 cup mayonnaise
  • 3 tablespoons frozen apple juice concentrate
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon-style mustard
  • 3/4 teaspoon celery seeds
  • 1/2 teaspoon grated lemon zest
  • 3 cups shredded green cabbage
  • 1 1⁄4 cups shredded carrots
  • 1 cup shredded red cabbage
  • 1 small red onion, finely chopped

Preparation

Step 1

1Combine mayonnaise, thawed apple juice concentrate, apple cider vinegar, Dijon-style mustard, celery seeds and grated lemon zest in a small bowl. Mix until the dressing is well blended.
.2Combine green cabbage, carrot, red cabbage and red onion in large bowl with tight-fitting lid. Toss to mix well.
.3Add dressing to cabbage mixture. Stir until vegetables are evenly coated with dressing.
.4Cover tightly and refrigerate coleslaw until ready to serve. Or place coleslaw in serving dish; garnish with parsley sprigs, if desired, and serve immediately.
