PB-Filled Rainbow Sugar Cookies

  • 1 bag Betty Crocker Peanut Butter Cookie mix
  • 2 bags Betty Crocker Sugar Cookies mix
  • Neon gel food coloring and sprinkles, assorted colors

Mix up the peanut butter cookie mix; roll into 48 balls and place on a cookie sheet. Put into the refrigerator to cool.

Mix up both packages of sugar cookie dough; separate into five even portions. Mix each portion with a different color food coloring. (To keep your hands clean while kneading the colors, put dough into a plastic bag to knead the color into the dough evenly.)

Pinch a small amount of dough from the first sugar-cookie ball and pat it into a circle in the palm of your hand. Add one of the chilled PB balls to the center of the colored dough circle. Wrap that PB ball with the colored dough, rolling it between your palms to make a nice round ball. Roll the ball in similarly shaded sugar, sprinkles or jimmies. Place about 2-inches apart on cookie sheets. Chill each sheet for 15 minutes before baking.

Bake at 375°F for 8 or 9 minutes. Remove from the oven and lightly tap the tops with the bottom of a glass to flatten them. Don’t squish or smush them … just tap ‘em slightly to take the bump off the top if there is one.

Let the cookies cool 2 minutes on the baking sheet before removing them to a cooling rack to cool completely.
