Breads: Helen Wells' Biscuits (Recipe 1 & 2)

Ingredients

  • For 1 dozen biscuits:
  • 1 cup white flour
  • 1 cup wheat flour
  • 2 t baking powder
  • 1/4 t salt
  • 1/4 t soda
  • 1/4 cup oil
  • 2 T vinegar
  • 1 cup skim milk

  • 2 cups flour
  • 4 t baking powder
  • 1 t salt
  • 1/8 t soda
  • 1/2 cup or more shortening
  • buttermilk

Preparation

Step 1

Sift flour, baking powder, salt and soda.
Cut in oil.
Mix vinegar and milk.
Add to make dough.
Roll out and cut 1 " thick
Bake about 12 minutes.

Preheat oven to 475 degrees.

Helen Wells' Biscuit Recipe #2

Mix dry ingredients.
Cut in shortening.
Add buttermilk until a soft dough is formed.
Roll out.
Melt some shortening and dip each biscuit in it before baking.

Bake in a 450 degree oven for approximately 12 minutes.
