Ingredients

  • Filling:
  • 2 cans of large shrimp
  • 1/2 med onion grated(or mashed in food processor)
  • cayenne pepper to taste
  • mayonnaise
  • Bread:
  • Cut off crust and roll flat with rolling pin.

Step 1

Drain and wash shrimp then mash with a fork or put into food processor. Add onion, a pinch of cayenne pepper and enough mayonnaise for a creamy spreadable consistency. Spread mixture on flattened bread squares and roll into a tight roll from straight edge to straight edge. (Don't spread too much filling on bread. Should only be as thick as the flattened bread.)Wrap 4 or 5 rolls together in plastic wrap and refrigerate for several hours or over night, until ready to serve. Slice crossways in approximately 1/2 to 3/4 inch slices. Arrange on a plate with parsley or cilantro. Makes a pretty presentation and they are delicious!
