- 1 Can crushed pineapple -- 16 oz.
- 2 cups mini marshmallows
- 1/2 cup sugar
- 1 tablespoon corn starch
- 1 egg -- well beaten
- 1 1/2 tablespoons white vinegar
- 1 carton Cool Whip® (8 oz.) -- room temperature
- 2-3 apples, diced with skins
- 1 cup spanish peanuts (peeled) or reg. peanuts

Step 1
Drain pineapple and save juice. Mix pineapple and marshmallows together and set aside. In a saucepan combine corn starch, pineapple juice, sugar and vinegar. Cook until mixture thickens. Add the egg slowly. Cool mixture and combine with cool whip. Fold in marshmallows and pineapple mixture. Add apples and peanuts. Chill 8 hours.
