Beef with Red Wine Sauce

Fifteen minutes of prep time are all you need to enjoy this flavorful beef-and-noodle meal at the end of the workday. The meat takes on the full flavor of the mushrooms, onion slices, and secret ingredient: brown gravy mix. Serve over egg noodles for a one-dish meal that's big on comfort and low on effort.
Ingredients
- 3 pounds boneless beef chuck roast, cut into 1-inch pieces
- 1 medium onion, sliced
- 1 pound fresh mushrooms, halved
- 1 (1.61-ounce) package brown gravy mix
- 1 (10 1/2-ounce) can beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 bay leaf
- Hot cooked egg noodles or rice
- Garnish: chopped fresh parsley
Preparation
Step 1
Place first 3 ingredients in a 6-quart slow cooker.
Whisk together gravy mix and next 3 ingredients; pour evenly over beef and vegetables. Add bay leaf.
Cover and cook on HIGH 6 hours. Remove and discard bay leaf. Serve over noodles. Garnish, if desired.

We enjoyed this dish a bunch and tried a different way of making it by substituting it with a dark beer, such as Guinness.
The beef was a huge hit with my guests. They were practically licking the crock pot clean! It was so easy to pretty much just throw everything in the pot, and it made the apartment smell great all afternoon. I will definitely make it again.
Not as good as I had hoped. It was easy to prepare, and had a good flavor, but the meat was not very tender.

Needs more flavor. Might substitute the water in the gravy mix with less beef broth. Noodles and beef combo is good though
Not bad but probably will not make it again. For this type of recipe, "Beef Daube Provencal" from Cooking Light remains our favorite. This one requires less work, but we did not think the flavor was as good.
I used 3 pounds of stew beef. About the same price per pound and saved the time of cutting up the roast. Check the size on gravy mix package, I bought two .87 sized envelopes to equal the l.6 suggested in the recipe. No need to add additional spices, great flavor as-is. Terrific busy day supper for family and friends. Will definitely keep this one.
This recipe is so easy and delicious. I only used 3/4 cup red wine and the flavor was excellent. I served it over rice in pasta bowls and it was perfect. I agreed with the other reviews that the sauce was the tiniest bit thin, but then again, it's a "sauce" and not a "gravy". My husband asked that it be added to the regular rotation, and since it's so easy and yummy, I am happy to oblige!
This was similar in taste to Beef Stroganoff, but the wine definitely added depth to the flavor (and fewer calories without the sour cream!). I liked that I didn't have to brown the meat beforehand...and it turned out tender and juicy.
