Buffalo-style Meatballs

You can also make a mean meat loaf with this recipe! Just place half of the beef mixture from Step 1 in a 9-x 5-inch loaf pan. Sprinkle about 2 ounces blue cheese on top of the meat. Cover with the rest of the beef mixture and bake at 350°F until cooked through, 50–60 minutes. Serve the hot pepper and butter sauce on the side.

Ingredients

  • 1 pound lean ground beef
  • 1/4 cup bread crumbs
  • 3 tablespoons finely chopped green onions (about 3 medium)
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 wedge (4-ounce) blue cheese
  • 1/4 teaspoon black pepper
  • 3 tablspoons butter
  • 1/2 cup hot pepper sauce

Preparation

Step 1

1.Preheat oven to 400°F. Combine the beef, bread crumbs, onions, egg, Worcestershire sauce, salt and black pepper in a large bowl.

2.Cut the blue cheese into 1/2-inch pieces. Place about 1 tablespoon beef mixture in your hand and press 1 piece of cheese into the center. Shape the beef mixture around the cheese, forming a ball. Repeat with the remaining beef mixture and cheese, forming 11/2-inch balls.

3.Place the meatballs on an ungreased 15- x 10- x 1-inch baking pan about 1/2-inch apart. Bake until browned and cooked through, about 20 minutes. Meanwhile, melt the butter in a large nonstick skillet over low heat. Add the hot pepper sauce. Mix well. Gently toss the baked meatballs in the sauce until coated. Serve.
