Blueberry Delight

Ingredients

• 20 graham crackers (1-13.5 oz box)
• 1/2 c. butter (melted)
• 1/2 c. brown sugar
• 1 pkg. (8oz) cream cheese
• 1/2 c. white sugar
• 2 eggs
• 1 tbsp lemon juice
• 1 can blueberry pie mix

Preparation

Step 1

Mix crushed graham crackers with melted butter and brown sugar. Pat this mixture firmly into the bottom of a buttered 9x13 cake pan. Mix thoroughly the cream cheese and white sugar together until smooth. Add eggs one at a time, beating after each. Mix in lemon juice and pour mixture over graham cracker crust. Bake 20 minutes at 350 deg. Cool. Spoon pie filling over top. Chill overnight. Cut into squares and serve with whipped cream. Serves 12.
