Lamb Ragu with Mint

Ingredients

  • 1 pound rigatoni
  • 2 tbsp olive oil
  • 2 shallots, chopped
  • 1 clove garlic, minced
  • 1 1/2 pound ground lamb
  • 1 cup red wine
  • 4 cup marinara sauce
  • 1/2 cup fresh mint leaves
  • 1/2 cup ricotta cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

1. Bring large pot of salted water to boil. Add pasta and cook until tender, but firm, 8-10 min. Drain

2. In a large skillet, heat olive oil. Add shallots and garlic, cook for 3-4 minutes. Add ground lamb, salt and pepper. Cook until lamb has browned and juiced have evaporated.

3. Add wine, scraping up any brown bits from bottom of pan with wooden spoon. Simmer until wine has reduced by half. Add marinara sauce and simmer over low heat until flavors have blended, about 10 minutes.

4. Add mint and ricotta and stil until mixed. Add pasta and stir to coat and serve.
