Pan-Seared Steak with Mushroom Pan Sauce

Ingredients

  • 1 1/2 lbs sirloin steak
  • 1/4 t salt
  • 1/4 t pepper
  • 1-2 T + 2 t vegetable oil
  • 1 c sliced mushrooms
  • 1 diced shallot
  • 1 c beef broth
  • 2 T unsalted butter

Preparation

Step 1

1. Season sirloin with salt and pepper. Bring to room temp (leave out for up to 1 hr)
2. Heat 1-2 T vegetable oil in a stainless steel (not nonstick) skillet over med-high to high heat.
3. Place steak in pan and cook 3 mins without moving it around.
4. Use tongs to flip over steak and cook for another 3 mins - again, no touching.
5. If steak is more than 1 in thick, finish in a 325 oven until cooked to desired doneness. Meat should register 130 on an instant-read thermometer for rare. The temper will rise 5 while it rests. Let rest 5 mins before slicing.
6. Meanwhile, add 2 t vegetable oil to pan and heat over med heat. Add mushrooms and shallot to pan. Cook, stirring up any browned bits on pan, 5 mins. Add beef broth and bring to a simmer. Cook 2 mins and remove from heat.
7. Stir in unsalted butter until melted. Spoon over sliced steak.
