Ingredients

    Cup canola oil

  • 24

    oz sliced mushrooms

  • 5

    lbs poached, shredded or chopped chicken breasts

  • 3

    Cans tomato sauce

  • 3

    Cups pace picante sauce

  • 1

    Cup sliced olives

  • 1 1/2

    Cups green onions sliced (both white and green parts)

  • 4

    teaspoons cumin

  • Additional ingredients:

  • 12

    tostada shells

  • 1 1/2

    lbs grated cheddar cheese

  • 1 1/2

    lbs grated jack cheeses

  • 1

    large head lettuce shredded

  • 10-12

    chopped tomatoes

  • 2

    bunches green onions sliced

  • 3-4

    cups guacamole or sliced avacado

  • 2

    quarts refried beans (add some sour cream and jack cheese to this)

  • 1

    quart Fresh Salsa

  • 3

    Cups sour cream

Directions

Poach chicken and shred. Saute mushrooms in oil, cool. Mix mushrooms through cumin together. heat thoroughly. Cool. Can refrigerate or freeze at this point. Assmeble Tosatadas with chicken mixture and toppings. Beans and Chicken should be heated before assembly. Serves 12
