Fried Green Tomatoes

With autumn comes the beautiful foliage color changes,cooler temperatures, and fresh fruits and vegetables from the garden. It is these tastey (sic) treats of nature to which we turn our attention in this issue.
In the old days these dishes were often found at potlucks and family gatherings. Sadly, not so much today...
We have also included a recipe for Fried Green Tomatoes because in this northern climate the odds of having green tomatoes still on the vine right now are very good. Enjoy!
Ingredients
- 1 cup medium grind cornmeal (preferably fresh ground)
- 5 green tomatoes sliced about 1/4" thick
- 1/2 cup extra-virgin olive oil
- Salt, to taste
- Freshly ground pepper, to taste
Preparation
Step 1
Pour cornmeal onto a large, flat plate. Heat the oil in a large cast iron skillet over medium heat. With your fingers or a fork, dip each slice of green tomato in the cornmeal, coating both sides well. Place the tomato slices in the skillet to fry, being careful to not crowd them. Cook for about 3 minutes on each side until golden brown. Season to taste. Excellent late afternoon snack or country luncheon dish.
