Ingredients
- 4 cups flour
- 2 cups oatmeal, uncooked
- 2 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 1/2 cups softened butter
- 2 cups firmly packed brown sugar
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups pumpkin
- 1 cup dried cranberries
Preparation
Step 1
Preheat oven to 350
Combine flour, oats, baking soda and spice. Set aside
Cream butter, gradually add sugars beating until light and fluffy. Add egg and vanilla, mix well.
Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Mix in cranberries.
For each cookie drop about 1/4 cup dough onto lightly greased cookie sheet. Bake for 20 - 25 min until cookies are firm and lightly browned.
