Ingredients

  • 3 hard boil eggs
  • 1 1/2 tsp yellow Mustard
  • 3 T cider vinegar
  • 3 T sugar
  • 1 large head Romaine lettuce chopped ( can use half spinach)
  • 6 slices cooked bacon
  • 1/4 cup bacon drippings
  • 2 chopped green onions

Preparation

Step 1

Separate whites and yokes
chop whites and set aside
Smash yolks and mix with mustard, vinegar and sugar
Toss lettuce with egg dressing, then drizzle warm bacon drippings
Sprinkle top with bacon, egg whites and onions
