  • Yeast Starter:
  • 60 g Dry Active Yeast
  • 700 ml Warm Water
  • 200 g Sugar
  • 110 g Bread Flour
  • Dough:
  • 4500 g Bread Flour
  • 100 g Salt
  • 2500 ml Milk
  • Butter Patty:
  • 6 lb Butter, soft
  • 250 g Bread Flour

Preparation

Step 1

-Combine ingredients for starter, allow to activate.
-Combine starter with rest of dough ingredients, do not over-mix. Allow to rest.
-Make butter patty.
-Roll butter in, do three book folds, allowing dough to rest 20 minutes between folds.
