Peaches and Cream Oatmeal Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 pkg. instant pudding (keeps cookies from getting too hard)
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 2 cups (6 packets) Peaches and Cream Instant Oatmeal (or flavor of choice)
  • 12 oz. Package of semi-sweet chocolate chips
  • 1 cup slivered almonds

Preparation

Step 1

Preheat oven to 350 degrees. Cream together butter, brown sugar, white sugar, eggs and vanilla. In a separate bowl, mix, flour, dry pudding mix, baking powder, baking soda, salt and cinnamon. Add to creamed mixture and stir together. Mix in oatmeal, chocolate chips and nuts. Line a large baking sheet with baking parchment. Drop cookies by rounded teaspoons onto baking sheet. Bake 12-15 minutes.

Variation: Pumpkin pudding mix with maple and brown sugar oatmeal.
