The American 'Classic' Beef Stew

Ingredients

  • 1 Tablespoon olive oil
  • 12 oz. lean stew beef
  • 2 cups carrots cut into 1-inch pieces
  • 1 cup each: parsnips, celery, and potatoes, cut into 1-inch pieces
  • 2 medium onions, cut into quarters
  • 1/2 teaspoon dried thyme
  • 2 cups beef broth

Preparation

Step 1

Heat oil over medium heat in a large pot. Cube beef and brown; drain. Add remaining ingredients, cover and simmer until beef and vegetables are cooked, about 45 minutes.
