Austrian Soufflé Pillows

For a special occasion, Grandma sometimes offered these in individual soufflé cups. She generously buttered 6 individual soufflé cups and mounded equal portions of batter in them. She baked the soufflés at 375°F until puffed and golden, 8 to 10 minutes.

Ingredients
- 6 egg whites
- 1 tablespoon lemon juice
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 4 egg yolks
- 1 tablespoon all-purpose flour
- Confectioners' sugar, optional
- Lemon zest strips, optional for garnish
Preparation
Step 1
1.Preheat oven to 375F. Generously butter a 13 x 9-inch baking pan.
2.Combine the egg whites, lemon juice, lemon zest and vanilla extract in a large bowl. Beat with an electric mixer set at medium speed until soft peaks form. Add granulated sugar gradually, beating at high speed until stiff peaks form.
3.Place egg yolks in a small bowl. Beat at high speed until thick, about 5 minutes. Stir in the flour.
4.Fold a small amount of the egg white mixture into the egg yolk mixture. Return to egg white mixture and fold together gently. Spoon into prepared pan, forming 6 mounds.
5.Bake until puffed and golden and a knife inserted in the centers of the mounds comes out clean, 10 to 12 minutes. Sprinkle with the confectioners’ sugar and garnish with lemon zest strips, if desired. Serve warm.
