Ingredients
- Crust:
- 2 c chocolate wafer crumbs
- 1/4 c melted butter
- Filling:
- 3/4 c semi-sweet or dark chocolate chips, melted
- 1/4 c heavy cream
- 1/4 c Kahlua
- 32 oz cream cheese, softened
- 1 c sugar
- 1/3 c cocoa powder
- 4 eggs
- 1 t vanilla
- Ganache:
- 1 c semi-sweet or dark chocolate chips, melted
- 1/4 c heavy cream
- 2 T Kahlua
Preparation
Step 1
Heat oven to 325º
Prepare Crust: Mix chocolate wafer crumbs and melted butter. Press into bottom of a 9" springform pan.
For Filling: beat cream cheese and sugar with an electric mixer until fluffy. Add remaining filling ingredients one at a time to make sure its thoroughly mixed. Scrape down the sides of the bowl too.
Pour filling into prepared crust and bake for about 40-50 minutes, or until filling is set (only just slightly wobbly). you might need to add more time - better to check on it early than over bake it! .
Let cake cool, then stir together the ganache ingredients and pour on top of the cake.
Refrigerate at least 6 hours before unmolding pan and serving. Garnish with whipped cream.
