Baked Tilapia with Tuscan Crumb Topping

Ingredients
- 1 1/2 pounds tilapia fillets
- 2 tbl olive oil
- 1 cup italian parsley -- loosely packed
- 1/4 cup shredded parmesan cheese
- 1 clove garlic
- 1 tbl lemon zest
- 1/8 tsp black pepper
- 1 3/8 tsp each salt and pepper mixed

Preparation
Step 1
Sprinkle fillets with salt and pepper. Rub a baking sheet with 1T of the oil and place fillets on in a single layer.
Preheat oven to 400f.
In a food processor, place cheese, garlic, parsley, zest and 1/8tsp pepper. Pulse to roughly chop to a 'crumb' texture. Stir in the additional olive oil and sprinkle evenly over fillets.
Bake, uncovered, for 12 minutes or until fish is cooked through.
