Zucchini Bread

Ingredients

  • 2/3 c. shortening
  • 2 2/3 c. sugar
  • 4 eggs
  • 3 c. shredded zucchini
  • 2/3 c. water
  • 3 1/3 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 2 tsp. vanilla
  • 2/3 c. each walnuts and raisins

Preparation

Step 1

Heat oven to 350°. Grease bottoms of two loaf pans. Mix shortening and sugar in bowl. Add eggs, xucchini and water. Blend in remaining ingredients. Pour in pans. Bake for 60 to 70 minutes. Can be refrigerated up to 10 days or frozen.
