Oatmeal Pancakes

Ingredients

  • 1 c milk
  • 2/3 c quick rolled oats
  • 2/3 c flour
  • 2 T brown sugar
  • 1 1/2 t baking powder
  • 1/4 t salt
  • 1/4 t cinnamon
  • 2 eggs, beaten
  • 2 t cooking oil
  • 1/4 t vanilla

Preparation

Step 1

Heat milk in saucepan until hot, remove from heat and add oats (you can also heat in the microwave). Cover and let stand for 5 minutes.

In a small bowl combine eggs, oil and vanilla.

In a medium bowl stir dry ingredients together. Make a well in the center and add wet ingredients and oatmeal all at once, stir until combined.

Pour 1/4 cup of batter onto griddle/skillet and cook for ~ 4 minutes - flipping once.
