Ingredients

  • 1

    C sugar

  • 1/2

    C vegetable oil

  • 2

    eggs

  • 1

    C (8oz.) sour cream

  • 1 1/2

    C all-purpose flour

  • 2

    tsp. baking powder

  • 1/2

    tsp. salt

  • 1

    Can (8 oz.) crushed pineapple drained

  • Topping:

  • 1/2

    C flaked coconut

  • 3

    TBS. sugar

  • 1/2

    tsp. ground cinnamon

Directions

1. blend sugar, oil. Add eggs one at a time, beating well after each addition. Beat in sour cream. 2. combine flour, baking powder and salt; add to the sour cream mixture. Stir in pineapple. 3. Transfer to 9 inc. square baking dish. Combine the topping ingredients; sprinkle over batter. Bake at 350 for 35-40 min. or until toothpick comes out clean. 9 servings.
