WW Corn and Bacon Muffins

Ingredients

  • 2 1/2 cups + 2 tbs self rising flour - sifted
  • 1/4 tsp salt
  • 2 tbs + 2 tsp imitation bacon bits
  • 1/2 cup skim milk
  • 1/2 cup canned cream style corn
  • 2 eggs - lightly beaten
  • 1/4 cup margarine, melted

Preparation

Step 1

Oven 400
Spray twelve 2 3/4" muffin cups with nonstick cooking spray
In a large bowl, combine flour and salt. Add bacon bits; stir to combine.

In medium bowl, combine milk, corn, eggs and margarine. Add wet ingredients to dry, stir just until combined

Spoon batter into prepared cups. Bake 20-25 minutes until toothpick inserted in center comes out clean. Cool on wire rack 10 minutes.
