Mayonnaise Cake

“It seems strange to use mayonnaise in a cake, but Grandma said mayonnaise is basically eggs and vegetable oil.”

Grandma's simple, uncooked frosting is great on this cake. Combine 1 teaspoon of butter, 1/2 teaspoon of vanilla, 1 teaspoon of corn syrup and 1 1/2 tablespoons of boiling water in a large bowl. Add 11/2 cups confectioners' sugar and beat, adding a few drops of water, until mixture is of spreading consistency.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 teaspoons unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/8 teaspoon salt
  • 1 cup mayonnaise
  • 1 cup boiling water
  • 1 teaspoon vanilla extract
  • 1 (12-ounce) can buttercream frosting

Preparation

Step 1

1.Preheat the oven to 350ºF. Grease and flour a 9-inch square baking pan.

2.Sift the flour, granulated sugar, cocoa, baking soda and salt into a large bowl.

3.Add mayonnaise to flour mixture and mix well. Add boiling water and vanilla extract and mix well.

4.Pour into prepared baking pan. Bake for 25 to 30 minutes.

5.Let stand in pan on a wire rack to cool completely. Spread frosting over the top of the cake.
