Along with the honey mustard mayonnaise, we usually had a fruity, ketchup-type sauce on the table that Grandma called "ketchup-berry" sauce. She combined equal amounts (about 1/3 cup each) of bottled chili sauce and whole cranberry sauce.

Ingredients

  • 2 pounds ground chicken
  • 2 teaspoons dried tarragon, divided
  • 1/2 teaspoon garlic powder
  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup mayonnaise
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon honey
  • 6 whole-wheat hamburger buns, split
  • 6 leaves lettuce
  • 6 slices pepper Jack cheese

Preparation

Step 1

1.Combine the ground chicken, 1 1/2 teaspoons tarragon and garlic powder in a medium bowl and mix well. Stir in egg. Chill, covered, for 2 hours.

2.Preheat the grill to medium. Place grill rack 6 inches from heat.

3.Shape ground chicken mixture into 6 patties. Sprinkle with salt and black pepper.

4.Grill until cooked through, about 6 minutes per side.

5.Mix mayonnaise, mustard, honey and remaining tarragon in a small bowl.

6.Grill buns until lightly browned. Spread insides of buns with mayonnaise mixture. Place a lettuce leaf, chicken pattie and slice of Pepper Jack inside each bun; serve.
