Ingredients

  • 4 green onions, thinly sliced
  • 2 carrots, peeled and thinly sliced into 3-inch long strips
  • 2 tablespoons finely chopped gingerroot
  • 2 garlic cloves, sliced
  • 4 cod fillets (about 5 1/2 ounces each)
  • 1/4 cup chopped fresh cilantro
  • 4 tablespoons light soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons sugar
  • 4 lime slices

Preparation

Step 1

1.Preheat oven to 475°F. Cut 4 squares each of aluminum foil and parchment paper, each the same size and large enough to encase the fish. Lay each piece of parchment on top of a piece of foil.

2.Mix together the onions, carrots, ginger and garlic. Arrange in a small pile in the center of each piece of parchment paper.

3.Place a fish fillet on top of each vegetable bundle. Divide the cilantro evenly among each bundle, placing on top of the fish. Drizzle the soy sauce and sesame oil over each. Sprinkle with sugar and top with a slice of lime.

4.Bring up the sides of the foil and paper; fold to seal completely. Place on a baking sheet and bake for 15 minutes. Unwrap and serve.
