Chinese Style Stir-Fried Mushrooms

  • 2 tablespoons peanut oil
  • 1 teaspoon ginger minced
  • 1 teaspoon garlic minced
  • 8 ounces fresh shiitake mushrooms quartered
  • 1 tablespoon soy sauce
  • 1 tablespoon sliced green onion (scallions) green part only
  • 1 tablespoon sesame oil

Step 1

Over medium-high heat, heat a large heavy nonstick skillet until a drop of water sizzles on the surface. Add oil, ginger, and garlic; cook, stirring constantly, until fragrant, about 1 minute. Add mushrooms; cook, stirring frequently, until mushrooms are golden brown, 3 to 4 minutes.

Add soy sauce and sesame oil; cook and stir until most of the soy sauce evaporates, 1 to 2 minutes.

Remove from heat; sprinkle with green onion. Top with toasted sesame seeds and serve over steamed rice, if desired.

This recipe yields 2 servings.
