Berry Cobbler

  • 4 cups blackberries
  • 1 tbsp lemon juice
  • l large egg
  • 1 cup sugar
  • 1 cup flour
  • 6 tbsp butter



Step 1

Preheat oven to 375. Place four cups blackberries in a lightly greased 8-inch square baking dish; sprinkle with 1 Tbsp. lemon juice. Stir together 1 large egg, 1 cup sugar, and 1 cup all-purpose flour in a medium bowl until mixture resembles course meal. Sprinkle over fruit. Drizzle 6 Tbsp melted butter over topping. Bake at 375 for 35 minutes or until lightly borwned and bubbly (mine wasn't browned so I broiled for 10 minutes). Let stand 10 minutes. Serve warm with whipped cream, if desired. Garnish with fresh mint spring, if desired. Make 6 servings
