Ingredients

  • 3 sticks butter
  • 3 large onions -- chopped
  • 2 bell peppers -- chopped
  • 1 can Ro-Tel tomatoes
  • 3 pounds crawfish tails
  • 1 bunch green onion tops
  • 4 cloves garlic
  • parsley (optional)
  • salt & pepper to taste
  • 1 can cream of mushroom soup

Preparation

Step 1

Melt butter. Add bell peppers and onions; add garlic. Cook slowly about 1 hour.
Add Ro-Tel and crawfish tails. Cook 10 minutes.
Add mushroom soup, onion tops and parsley. Cook slowly about 30 minutes.
Seasoning may be added at any time.

Serve on rice
