Icebox Sugar Cookies

Makes a large batch, about 8 dozen. These are easier to make than traditional sugar cutouts. (Taste of Home)

Ingredients
- 2 sticks butter (1 cup) No substitutes
- 2 cups white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 3 1/2 cups flour
Preparation
Step 1
In a mixing bowl, cream butter and sugar. Beat in eggs and vanilla. Combine flour, baking soda and salt and gradually add to creamed mixture. Shape into (3) 10 inch logs, and wrap in Saran wrap or waxed paper. Refrigerate 1 hr or until firm.
Unwrap and cut into 1/4 inch slices; place on greased baking sheets. Sprinkle with sugar, or colored sugar. Bake at 375 for 8-10 minutes, or until lightly browned. Cool on wire racks. (from a Taste of Home recipebook)
NOTE: The logs can also be frozen, to bake later, just thaw in the refrigerator.
