Baked Harvest Oatmeal Muffins

Ingredients

  • 2 cups Oats
  • 1/4 C ground flaxseed (optional)
  • 2 tbs flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 3/4 tsp salt
  • 1 1/2 C milk
  • 1/2 C unsweetened or berry applesauce
  • 1/2 C firmly packed brown sugar or maple syrup
  • 1 large egg
  • 2 tbs safflower oil
  • 2 tsp vanilla extract

Preparation

Step 1

Heat oven 350 F Line 12 muffin pans with cupcake liners. In bowl, combine oats, flaxseed, flour, baking powder, cinnamon & salt. In a large bowl, whisk together milk, applesauce, brown sugar, egg, oil & vanilla extract. Add flour mixture, mixing just until combined. Stir in add-ins from list below if desired. Divide batter evenly among cupcake liners. Bake 20 min or until done.

Apple-Raisin ½ C grated apples, ¼ C raisins
Banana-Chocolate Chips 2/3 C mashed banana and 1/3 C chocolate chips
Blueberry-Lemon 1 C fresh blueberries, 1 tbs lemon juice
Peanut Butter-Chocolate chips ¼ C peanut butter ½ C white or dark chocolate chips
